Happy Father’s Day! For many, picking out a father’s day gift can be a challenge. Most of the time, dads have every new gadget, movie or tool they could ever want. This year I decided to cook my parents a dinner for father’s day and my mom’s birthday as they convinently fall within a week of each other. But I didn’t cook just any meal, I cooked an organic vegan meal. (Now living in the MPLS, I have the luxury and offerings to live as a vegetarian comfortably. Back home in small town Wisconsin, I still get the question how do you get your protein if you don’t eat meat?Silly question that I won’t get into now, but wanted to show my parents a healthy, fulfilling, meatless option for dinner.) I cooked quinoa stuffed peppers and a pineapple jicama salad. I paired this with a tasty organic red table wine. Dinner went over really well and I was happy that I got to show my parents something new.
