Happy Father’s Day! For many, picking out a father’s day gift can be a challenge. Most of the time, dads have every new gadget, movie or tool they could ever want. This year I decided to cook my parents a dinner for father’s day and my mom’s birthday as they convinently fall within a week of each other. But I didn’t cook just any meal, I cooked an organic vegan meal. (Now living in the MPLS, I have the luxury and offerings to live as a vegetarian comfortably. Back home in small town Wisconsin, I still get the question how do you get your protein if you don’t eat meat?Silly question that I won’t get into now, but wanted to show my parents a healthy, fulfilling, meatless option for dinner.) I cooked quinoa stuffed peppers and a pineapple jicama salad. I paired this with a tasty organic red table wine. Dinner went over really well and I was happy that I got to show my parents something new. For more delicious organic foods and receipes, visit your local co-op. The Stone Arch Festival was this weekend. I love this festival, not only for its great location, but for it’s unique artist. Different from the uptown artfair in August, the Stone Arch is more quaint and offers live music and wonderful patios with a specatular view of the river. The photo above is by one of my new favorite artists, Bruce Reinfeld. He takes B/W photos, digitally enhances the photo with a touch of color and prints on canvas. Bruce won best in show at Stone Arch. Check out his work at highfidelitydisco.com

Pura Vida is a Costa Rican phrase which contextually means “full of life” or “this is living.” It can be used as a greeting, farewell or to show satisfaction. I’m taking a spin on the phrase and bringing it back to MPLS to highlight the leisure, carefree lifestyle MPLS has to offer. Some other focuses of this tumblr will be around strong community, celebrating good fortune and health, and enjoying life while persevering - all which embody the Pura Vida philosophy.

Pura Vida Minneapolis! The time has come for us to shed our winter ways and emerge from hibernation. This past weekend was a true testiment to the pura vida lifestyle, so I hope you all lived up to it.
